Coconut Honey Joys
These sweet, golden handfuls of joy are my childhood favourite! Starring sticky dollops of honey and crunchy cornflakes, they are a snack favourite add some coconut, sprinkle freeze dried stawberries once cooked. They will become a must-have for every kid's party or birthday. They can also be popped into lunchboxes for lunch time treat.

Ingredients

75g Nutalex Butter

1/3 cup Honey

2 tbs Coconut Sugar

1 cup of Shredded Coconut

4 cups Gluten Free Corn Flakes

1 Packet of Frisp Freeze Dried Strawberries
Method

Preheat oven to 160C.

Line 24-hole patty pan with paper cases.

Melt butter, sugar and honey together in a saucepan until frothy.

Add corn flakes, coconut and mix well.

Working quickly, spoon mixture into patty cases.

Bake for 10 minutes.

Cool.

Finely chop the freeze dried strawberries and serve
